Tacos large

Tacos are on the exclusive list of Six Things My Kids Will Eat in Life. The trick is how to vary those items and keep your kids happy. Put out bowls of optional toppings and let the kids be creative. When kids choose their own foods, they're more likely to eat.

Makes 12 tacos

INGREDIENTS
1 medium onion, chopped (about 1 cup)
2 garlic cloves, minced (about 2 teaspoons)
2 tablespoons vegetable oil
1 pound ground raw turkey
1 tablespoon chili powder
1 cup Roasted Fresh Tomato Sauce or your favorite purchased brand
1 cup Chicken Broth or canned reduced-sodium chicken broth
Salt and pepper to taste
12 taco shells
Garnishes:
1 cup shredded iceberg lettuce
1 cup coarsely grated carrots
1 cup shredded low fat Monterey Jack or cheddar cheese
1 cup nonfat plain yogurt, or low fat sour cream
1/2 cup sliced, pitted olives, optional

DIRECTIONS
Preheat the oven to 350°F.

In a large nonstick skillet, cook the onion and the garlic in the oil over moderately low heat for 5 minutes or until the onion is softened. Add the turkey, and cook the mixture over moderate heat for 5 minutes or until the turkey is no longer pink. Add the chili powder, and cook for 2 minutes. Add the tomato sauce and the chicken broth, and simmer for 15 minutes. Add salt and pepper to taste.

Meanwhile, arrange the taco shells on a baking sheet and heat them in the preheated oven for 5 to 7 minutes or until warm.

To serve, spoon the turkey mixture into the shells and top with the garnishes.
